An easy and delicious meal, Batangas Bulalo is like the traditional beef soup cooked the Filipino way. It is just so perfect for the cold season.
You will definitely enjoy sipping on the soup as it is full of flavors.
Beef bulalo uses the shank or the leg portion. It is cooked for about 1.5 to 2 hours using a regular pot or around 30 minutes if using a pressure cooker. Many Filipinos are so delighted to be served with the bone marrow still inside the bone.
Below are the ingredients and procedures in cooking the famous Batangas Bulalo, a Filipino recipe.
1 small ginger, sliced
1 medium onion, sliced
1/2 tsp ground black pepper
1 tsp salt
3 tbsps fish sauce
2 medium potatoes, sliced
2 sweet corns
1 lb Shanghai Bok Choy or Chinese cabbage (pechay in Filipino)
1 lb beef shank
12 cups of water
Pour 12 cups of water in a pot.
Add the beef shank, onion, ginger, and ground pepper.
Under medium heat, let it boil for 1.5 to 2 hours. During cooking, occasionally check the meat for tenderness. You don't want to have a mushy meat.
Once the meat is tender, add the sweet corns, potatoes, fish sauce, and salt. Let it boil for another 15 minutes or until the potatoes are tender.
Once the potatoes are tender, add the Shanghai Bok Choy and let it simmer for additional 1-2 minutes.
Serve it with steamed rice.
Combine 2 tbsps of fish sauce, 1 chopped hot chili pepper, and 1 tbsp lemon juice.
